Coming from Kansas, I didn’t know what to expect from a small hotel restaurant in a very small, very old mountain village. Arriving with my father’s cousin, we were warmly greeted by name by the manager, who led us to my room and showed me the adjoining patio area. I had been told that the food here would be excellent and indeed it was. I was able to enjoy my first taste of Bitto cheese coupled with Valtellina wine. I loved their delicious Pizzoccheri buckwheat pasta, which I learned was a regional staple. Every morning, I was greeted and guided to my breakfast table, already set and waiting for me. Every meal I had here was extraordinary, and I always felt like I eating authentic regional food, not tourist food. I had to learn to eat slowly, savoring flavors and scents. I was told before I arrived “Respect the cheese!” Indeed, I don’t think I had a meal that didn’t include at least two kinds of cheese, all outstanding. The hotel part of this business was also unique to the setting. Perched on the side of the mountain, my room overlooked the Bitto valley, and the sound of water rushing downhill was ever-present. I spent some time on the covered porch across the hall from my room, where I had a view of the village. One could hardly imagine a more peaceful setting.
